My Lincoln Impinger would not heat so I replaced the thermocouple probe, the BI-metal thermostat and the thermostat capillary. Now it heats to 270 degrees only. what's next ???

Identify the model, Obtain the documentation, Read up on the design and operation. Make sure to understand how the system control works and senses. Dig out your trust DVOM and a clamp on amp-meter. Troubleshoot what is happening or not happening like you should have in the first place. Arbitrary parts changing without knowing the real problem is not what we do. It gets expensive without solving the problem. It also irritates customers and creates a distrust of all technicians. Not good for anyone. Also why we volunteer to help on this site. And yes, part of that service fee/rate has to cover reading and finding a units documentation. It's just not possible to keep all machines in you head today unless you only work on one or two.
Cleanliness of this oven is important to air flow. And they often have a air pressure switch that controls the heat. But give us a model for more info.
