That wine cooler is designed to operate at a specific temperature range. The thermostat is adjustable from 45° to 55°F.
Simply put the correct one in there (part number 11-0586-21). they're readily available on the internet. If you're having difficulty finding one, the contact Scotsman directly.

Just plug the part number in google and you'll find many suppliers for it.
They're all either coming up as obsolete, zero in stock...or call for lead time. Scotsman doesn't make or sell wine coolers anymore (early 2000s product), so support for them is dwindling. However, I think (hopefully) that I got him hooked up. If that doesn't work out, then he should call Scotsman.
Then do the work around. It will most likely be a Ranco. We know that being a wine cooler the working temp will be a mean of 45 to 55F. But if bonded to the evaporator coil the cut out will be about 20 to 25f If a free air bulb/coil the cut out will not matter and a A30 will work.
