we have recently replaced thermostat, controls, and contactor. the unit runs but makes a crackling noise underneath
One of two things have happened. You have disturbed the element wires and one is arcing, Or the mounting of the thermostat bulb was not routed correctly and is causing a short. Or water or cleaner got into the element area causing a arc. You should also check for abrading of the insulation. Especially where it goes threw the pan piviot.point. Snaking the thermostat bulb threw there may have done a bit of insulation damage.
If you have a high resistance on one of the wires to the elements, You may need to replace the harness. The wire used is very expensive silver coated high temp wire. And the terminals are also special and require a good positive crimper to replace. Usually if a terminal was loose or corroded and hotter than normal it will oxidize the wire back a good 6 inches. And there is not enough wire in the machine to cut back and reroute safety. .
If not electric related as above, you most likely have contaminated water. Drain completely and refill with the correct amount of distilled water- not "filtered" or "spring" water, only distilled.
Tilt Brazing pan. I forgot to mention that it is possible the one of the bar heaters is bad and having a internal arc.
