The harvest cycle is controled by a combination of a water level sensor to initiate it and the eyes for the drop to terminate. The water level sensors also control the ice thickness. Sounds like the machine needs to be cleaned first. Mineral build-up on the sensors is a big problem. Also the eyes get a mold on them and need to be cleaned often.
Why did you change the controller? And did you follow the enclosed instructions on the dip switch settings for the model of machine? This machine will also take 2 weeks to learn it's location and get efficient.

I forgot to mention that if the spray bars are not clean, water will go into the bin during ice mode and cause premature harvest. The water level sensor is a electric eye also.
If you had the old style control and replaced it with the new style, they have different harvest times. The old one was 10 min. The new one is 4 to 6 min.
