Since you didn't provide us with a model number, I can't give more detailed info, but if you're curious how your ice machine knows the bin is full, here's some info on a Manitowoc S Model's sequence of operation:
This is one reason (among many others) that a restaurant may choose to transport ice to another bin for later use. No sense having an ice machine sitting idle when the rush is incoming.
They have different ways of sensing full bin depending on the model. Most smaller Manitowoc's use the closed curtain over the ice for sensing, If let open for a certain time it will shut down till it closes. However multi evaporators usually have a bin sensor that shuts it down before the ice can get to the bottom of the head..
