"WIRES" aren't normally something that there's a part number for. Only if they're special (like bus cables or dedicated wire harnesses with plug-type terminations) or its a unit's entire wiring harness (which can be very expensive).
If you call your friendly neighborhood commercial cooking equipment repair company, their technician will generally have all kind of wires and wire terminals in their service vehicle...and can fabricate what wires that are needed.
I highly suggest that you do NOT go shopping for these materials yourself. Some applications in cooking equipment require special wire and terminals that you simply won't find in a home retail center or auto parts store.
