Does this have a filter and where?
No filter inside the machine, though there is likely a screen over the pump pickup that gets clogged.
Start off with complete disassembly, deep clean and sanitize.When is the last time this was done? Depending on volume of business this should be done at least twice per year.
Do you have any external filters on the water line supplying the machine?
Some external filters are just crud and sediment filters. Other much more expensive, but depending on your water quality level, perhaps necessary filters have scale inhibiting media.

The installer/ commissioning company should have installed one on the water supply line to the machine. You can buy on from Manitowoc or a outside supplier. But, If it is a yellow, Your water supply company probably overdosed a bit on fluoride.
Just wet vacuumed out a Prodigy that looked like a sandbox. Dark yellow crystals. Every year S&WB does this. That's why I drink my scotch neat.
Dark yellow crystals? Make sure its not the media from the water softener, Zeolite or whatever its called, that stuff will clogg everything, everywhere.
The zeolite I have seen will reflect light pretty good when you shine a flashlight on it, almost like a crystal or glass, if it does that, you got bigger problems.
No, we have this problem all over the property including ice machines that are in horse stables where I know there is no water softener installed, but thanks, I would not have considered that.
