I recently purchased a Berkel model gb slicer that I need a service manual and owners manual for. I know I will need some parts as well. Any suggestions on finding any of this?

Okay...here I go...
Berkel is part of the ITW Food Equipment Group, which owns Hobart, Baxter, Traulsen, Vulcan, Wolf, Berkel... and other food equipment companies.
If you do a search for the first three, then that leads you to a website that covers Hobart, Traulsen and Baxter. When you get there, there's tabs in the upper-left corner for any of those three.
If you do a search for the last three (which includes BERKEL), then THEY'RE grouped together and do the same as described above.
WHY this distinction in the grouping? I don't know. I have other WHYs that I haven't figure out about this either, like WHY there's a WOLF owned by Sub-Zero and THEN the the WOLF Equipment as mentioned above, but they're not the same company. OR...WHY I can get tech support from Vulcan, but none from Hobart. OR...
In any case, once you arrive at the Berkel website, look for the word/s RESOURCES (Vulcan) or RESOURCE CENTER in the upper RIGHT-HAND corner. Click on that and it will take you to a page that gives you an overwhelming set of literature options and a lengthy list of makes & models to scroll through.

Thank you very much for the information. I haven't found the GB model
either. I'm not 100% sure its a Berkel, it reads US slicing machine co
model GB. Its probably a 1950s or 60s slicer. I'll keep digging around.

Thanks, your right they don't make them like that anymore. The motor is so
quiet and smooth you wouldn't believe it. Thanks for giving me some
